Locking Notes

Currently notes that have been added under the Notes feature can be edited after the fact. Some of our staff have expressed concerns about this for legal reasons.

We think it may be a good idea to have the option to lock Notes so that once information is entered it cannot be altered. Another potential option would be to strikethrough notes that you want to change and add alterations with a time stamp attached.
